Make this vibrant, fruity starter using fresh watermelon. It is a refreshing alternative to traditional tomato salsa, perfect for outdoor gatherings.

Ingredients

  • 4 cups cubed seedless watermelon
  • 1/2 cup finely diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh mint leaves, chopped

Instructions

  1. Combine the cubed watermelon, red onion, cilantro, and minced jalapeño in a medium bowl.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the watermelon mixture. Gently toss to combine all ingredients.
  4. Stir in the chopped fresh mint leaves just before serving.
  5. Serve chilled as a refreshing bbq side or with tortilla chips.

Notes

  • For the best flavor, prepare this salsa no more than two hours ahead of serving.
  • If you prefer less heat, remove all seeds and white membrane from the jalapeño.
