Make crisp-tender roasted asparagus quickly. This simple recipe uses lemon and Parmesan for a flavorful, healthy side dish perfect for any meal.

Ingredients

Scale
  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Toss the trimmed asparagus with olive oil, salt, and pepper on a baking sheet. Spread the stalks into a single layer.
  3. Roast for 10 to 12 minutes until the asparagus is crisp-tender.
  4. Remove the pan from the oven. Immediately drizzle with fresh lemon juice and sprinkle with grated Parmesan cheese.
  5. Serve right away as a low carb side.

Notes

  • For best results, select asparagus stalks that are uniform in thickness so they cook evenly.
  • You can substitute nutritional yeast for Parmesan cheese if you need a dairy-free option.
  • This recipe works well with other roasted spring vegetables like broccoli florets.
