  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt, plus more for topping
  • 12 ounces dark chocolate (60-70% cacao), chopped
  • 1 tablespoon coconut oil (optional, for smoother melting)

Instructions

  1. Prepare a mini muffin tin by lining it with paper liners.
  2. In a medium bowl, combine the peanut butter, softened butter, powdered sugar, vanilla extract, and 1/4 teaspoon of sea salt. Mix until smooth and fully combined.
  3. Place about half of the chopped dark chocolate and the coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until smooth. Alternatively, melt the chocolate using a double boiler.
  4. Spoon about 1 teaspoon of melted chocolate into the bottom of each lined muffin cup, spreading it slightly to cover the base.
  5. Place the muffin tin in the freezer for 5 minutes to set the chocolate base.
  6. Remove the tin from the freezer. Place about 1 heaping teaspoon of the peanut butter filling on top of the set chocolate layer in each cup. Gently press the filling down slightly.
  7. Top the peanut butter filling with the remaining melted dark chocolate, ensuring the filling is completely covered.
  8. Immediately sprinkle a tiny pinch of flaky sea salt over the top of each cup.
  9. Refrigerate the peanut butter cups for at least 1 hour, or until the chocolate is completely firm.
  10. Peel off the paper liners and serve your easy homemade peanut butter cups.

  • For a richer flavor, use high-quality dark chocolate.
  • If the peanut butter filling is too soft to handle, chill it for 15 minutes before scooping.
