Ingredients
Scale
1 pound large sea scallops, muscle removed
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon fresh mint, finely chopped
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions
Pat the scallops completely dry with paper towels. This step helps achieve a good sear.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, chopped mint, salt, and pepper to make the marinade.
Place the dry scallops in a shallow dish and pour the marinade over them. Gently toss to coat. Let them marinate for 10 minutes; do not marinate longer as the acid can toughen the scallops.
Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
Remove the scallops from the marinade, allowing excess liquid to drip off.
Place the scallops on the hot grill. Grill for 2 to 3 minutes per side until they have nice grill marks and are opaque throughout.
Remove from the grill and serve immediately for a quick seafood recipe.
Notes
For the best results with grilled scallops marinade, use dry-packed scallops if you can find them.
If you are making this as gourmet party food, thread them onto small skewers before grilling for easy serving.
