Prepare restaurant-quality grilled scallops quickly. This recipe focuses on the quality of the protein with a bright, simple lemon and mint marinade for a light, zesty flavor.

  • 1 pound large sea scallops, muscle removed
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh mint, finely chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the scallops completely dry with paper towels. This step helps achieve a good sear.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, chopped mint, salt, and pepper to make the marinade.
  3. Place the dry scallops in a shallow dish and pour the marinade over them. Gently toss to coat. Let them marinate for 10 minutes; do not marinate longer as the acid can toughen the scallops.
  4. Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Remove the scallops from the marinade, allowing excess liquid to drip off.
  6. Place the scallops on the hot grill. Grill for 2 to 3 minutes per side until they have nice grill marks and are opaque throughout.
  7. Remove from the grill and serve immediately for a quick seafood recipe.

Notes

  • For the best results with grilled scallops marinade, use dry-packed scallops if you can find them.
