This simple appetizer combines warm, smoky grilled nectarines with cool, creamy burrata cheese, finished with a drizzle of honey for an elegant summer starter.

Ingredients

  • 4 firm, ripe nectarines
  • 1 tablespoon olive oil
  • 1 (8 ounce) ball fresh burrata cheese, drained
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • Pinch of sea salt

Instructions

  1. Prepare your grill for medium heat. Lightly oil the grates.
  2. Cut the nectarines in half lengthwise and remove the pits.
  3. Brush the cut sides of the nectarines lightly with olive oil.
  4. Place the nectarines cut-side down on the hot grill. Grill for 3 to 4 minutes until grill marks appear and the fruit softens slightly.
  5. Remove the nectarines from the grill and arrange them on a serving platter, cut-side up.
  6. Tear the burrata into large pieces and place them among the warm nectarine halves.
  7. Drizzle the honey evenly over the fruit and cheese.
  8. Sprinkle with fresh thyme leaves and a pinch of sea salt. Serve immediately.

  • For a flavor boost, use a high-quality truffle honey.
  • If you do not have a grill, you can sear the nectarines in a hot cast iron skillet with the olive oil.
