Juicy Honey Garlic Chicken Skewers for Parties

Make these easy grilled chicken skewers for your next gathering. The honey garlic marinade keeps the chicken juicy, and alternating vegetables adds color to these shareable bites perfect for a summer BBQ.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1 cup honey
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • Wooden or metal skewers (if using wood, soak for 30 minutes)

Instructions

  1. In a bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, and black pepper to create the marinade.
  2. Place the cubed chicken into a large zip-top bag or container. Pour half of the marinade over the chicken, reserving the other half for basting and serving. Seal and refrigerate for at least 2 hours, or up to 6 hours.
  3. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  4. Thread the marinated chicken onto the soaked skewers, alternating with pieces of red pepper, yellow pepper, and red onion to create rainbow chicken kabobs.
  5. Place the skewers on the preheated grill. Cook for 10 to 12 minutes total, turning every 3 to 4 minutes.
  6. During the last 5 minutes of cooking, brush the skewers generously with the reserved marinade. Discard any marinade that touched raw chicken.
  7. Continue grilling until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Remove from the grill and let rest for 5 minutes before serving. Serve with any remaining reserved marinade warmed slightly as a dipping sauce.

Notes

  • For make-ahead prep, you can assemble the skewers completely the day before. Store them covered in the refrigerator.
  • If you are cooking indoors, you can use a grill pan over medium-high heat. Adjust cooking time as needed.
  • Use firm vegetables like zucchini or cherry tomatoes for more variety in your summer BBQ skewers.
