Make this fresh, produce-heavy Greek Goddess Dip using only a blender. It is a healthy green dip recipe perfect for your crudite platter aesthetic at summer gatherings.

Ingredients

  • 1 cup fresh parsley
  • 1 cup fresh basil leaves
  • 1/2 cup fresh dill
  • 1/4 cup fresh chives
  • 1/2 cup plain Greek yogurt (use dairy-free for vegan option)
  • 1/4 cup mayonnaise (use vegan mayo for vegan option)
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water or vegetable broth (add more for thinner consistency)

Instructions

  1. Place all fresh herbs (parsley, basil, dill, chives) into your blender jar.
  2. Add the Greek yogurt, mayonnaise, lemon juice, garlic, Dijon mustard, salt, and pepper to the blender.
  3. Pour in the initial 1/4 cup of water or vegetable broth.
  4. Secure the lid and blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  5. If the dip is too thick for your liking, add more liquid, one tablespoon at a time, blending after each addition until you reach your desired consistency.
  6. Taste the dip and adjust salt or lemon juice as necessary.
  7. Transfer the Greek goddess dip to a serving bowl. Chill for at least 30 minutes before serving with raw vegetable crudites.

Notes

  • For a richer flavor, substitute 1/4 cup of the Greek yogurt with 1/4 cup of sour cream.
