Make quick, elegant grilled shrimp skewers with a simple garlic butter marinade. This recipe cooks fast and prevents overcooking, making it perfect as an appetizer or light main course.

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice (added after marinating)
  • 8 wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together the melted butter, minced garlic, parsley, oregano, salt, and pepper. This is your garlic butter shrimp marinade.
  3. Add the peeled shrimp to the marinade and toss gently to coat completely. Marinate for 15 to 20 minutes only. Do not marinate longer due to the risk of the shrimp becoming mushy.
  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates to keep shrimp from sticking to grill.
  5. Thread 4 to 5 shrimp onto each skewer. Try to thread them in a slight curve to keep them secure.
  6. Place the skewers on the hot grill. Grill for 2 to 3 minutes per side. Watch closely; shrimp cook quickly.
  7. When the shrimp turn pink and opaque, they are done. Total grill time should be 4 to 6 minutes.
  8. Remove the skewers from the grill. Immediately brush with the reserved lemon juice. Serve hot.

Notes

  • For best results and to prevent shrimp from spinning when you turn them, thread the shrimp onto the skewer twice, creating an S-shape.
  • If you are serving these as a premium appetizer, consider serving them with a small dipping sauce on the side.
  • To gauge doneness accurately, aim for an internal temperature of 145°F.
