Make quick, high protein dinners with these perfectly seared garlic butter steak bites cooked entirely in one pan. This recipe delivers deep caramelization without the time commitment of grilling whole steaks.

  • 1.5 lbs sirloin or ribeye steak, trimmed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon kosher salt, plus more for seasoning
  • 1/4 teaspoon black pepper, plus more for seasoning
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak cubes completely dry with paper towels. Season generously on all sides with salt and pepper. Dryness is key for a hard sear.
  2. Place a large cast iron skillet over high heat. Add the olive oil and let it heat until it just begins to smoke slightly. This high temperature is necessary for searing.
  3. Add half of the steak cubes to the hot skillet in a single layer. Do not overcrowd the pan. Cook for 2 to 3 minutes without moving them to develop a deep brown crust.
  4. Flip the steak bites and sear the other side for another 1 to 2 minutes. Remove the first batch of steak to a clean plate.
  5. Repeat the searing process with the remaining steak cubes.
  6. Reduce the heat to medium-low. Add the butter to the skillet. Once melted, add the minced garlic, thyme, and rosemary. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
  7. Return all the seared steak bites to the skillet. Toss quickly to coat the meat evenly in the garlic herb butter. Cook for 30 seconds to 1 minute more, depending on your desired internal temperature.
  8. Remove the skillet from the heat immediately. Garnish with fresh parsley and serve the steak bites directly from the pan.

Notes

  • Use a cast iron skillet for the best heat retention and sear.
  • For best results, cook the steak in batches. Overcrowding the pan lowers the temperature and steams the meat instead of searing it.
  • If you prefer a richer flavor, use garlic herb butter for steak that has been infused with herbs ahead of time.
