Make whimsical Ewok gingerbread cookies using simple gingerbread techniques and creative icing to mimic fur texture for a fun, nostalgic treat.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • Food coloring (browns and tans, optional for frosting)

Instructions

  1. Whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves in a medium bowl.
  2. In a separate large bowl, beat the softened butter and brown sugar until creamy.
  3. Beat in the egg and molasses until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a stiff dough forms.
  5. Divide the dough in half, wrap each half in plastic wrap, and chill for at least 2 hours.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one portion of the dough to about 1/4 inch thickness.
  8. Use an Ewok cookie cutter or a simple round/oval cutter to cut out shapes. Place them on the prepared baking sheets.
  9. Bake for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Prepare the frosting: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one teaspoon at a time, to reach a thick but spreadable consistency.
  11. To create the textured fur look, transfer the frosting to a piping bag fitted with a small, multi-opening tip (like a grass tip) or use a fork for a rougher texture.
  12. Pipe or spread the frosting onto the cooled cookies in short, overlapping strokes to mimic fur. You can use different shades of brown frosting for depth.
  13. Allow the frosting to set before serving your Star Wars party snacks.

Notes

  • For a firmer cookie that holds its shape well, chill the cut-out shapes on the baking sheet for 15 minutes before baking.
  • If you do not have an Ewok cutter, simple rounded shapes work well; the texture of the icing creates the character.
  • You can make these a holiday mashup recipe by adding a touch of orange zest to the dough.
