Make simple, charred grilled artichokes as a tactile appetizer for your outdoor gathering. This recipe focuses on the vegetable’s clear flavor.

Ingredients

Scale
  • 4 medium artichokes
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the artichokes: Trim the thorny tips off the leaves. Slice each artichoke lengthwise in half. Use a spoon to scoop out and discard the fuzzy choke and the inner purple leaves from the center of each half.
  2. Place the artichoke halves in a large pot of boiling water. Cook for 15 to 20 minutes until the base is tender when pierced with a fork. Drain well.
  3. Preheat your grill to medium heat. Brush the cut surfaces of the artichokes with olive oil and season with salt and pepper.
  4. Place the artichokes cut-side down on the hot grill grates. Grill for 5 to 7 minutes until grill marks appear and the edges are slightly charred.
  5. Flip the artichokes and grill for another 5 minutes until heated through. Squeeze fresh lemon juice over them immediately after removing them from the heat.
  6. Make the dipping sauce: In a small bowl, combine the mayonnaise, minced garlic, and 1 tablespoon of fresh lemon juice. Mix well.
  7. Serve the grilled artichokes warm with the lemon aioli for dipping.
