  • 2 slices sourdough bread
  • 1 ripe avocado
  • 1 teaspoon fresh lemon juice
  • Pinch of sea salt
  • Pinch of black pepper
  • 1 large egg
  • 2 thin slices radish
  • 1 teaspoon everything bagel seasoning

Instructions

  1. Bring a small pot of water to a gentle simmer for poaching the egg. Add a splash of vinegar if desired.
  2. Toast the sourdough bread slices until golden brown and crisp.
  3. In a small bowl, mash the avocado with the lemon juice, salt, and pepper. Spread the mixture evenly over the two toast slices.
  4. Carefully crack the egg into the simmering water. Cook for 3 to 4 minutes for a runny yolk. Remove the poached egg with a slotted spoon and gently place it on top of the avocado layer on one slice of toast.
  5. Arrange the thin radish slices on top of the avocado mixture.
  6. Sprinkle the everything bagel seasoning over the entire toast, including the egg. Serve immediately.

  • For the best poached egg, crack it into a small ramekin first before gently sliding it into the water.
